Only 2% loss of minerals when cooking with VapoSeal Waterless Stainless Steel Cookware. The construction is as follows: The inside layer(the layer that touches your food) is T304 surgical stainless steel. Due to it's non corrosive properties and hardness it is very safe and sanitary to eat out of. It does not easily deteriorate. The next layer is carbon steel and the T304 surgical steel on the outside sidewalls (the sidewalls are 3 Ply). For even heat conduction there is a layer of aluminum alloy, then solid aluminum, then aluminum alloy, and last AISI 430 stainless on the bottom which is necessary for using on induction ranges.
